Such properties stem from a high concentration of methylglyoxal in the nectar of manuka flowers. Unlike regular honey, this compound is derived from the conversion of dihydroxyacetone and comes in more substantial quantities than honey from alternative nectar sources.   

Since some cancers result from bacterial infections, research suggests that manuka honey’s antibacterial properties support the recovery of this kind of cancer sufferers. Cancer also results from oxidative stress, whereby there is an imbalance of antioxidants and free radicals in the body. Darker honeys, such as manuka honey, have higher concentrations of phytochemicals, which studies show reduce DNA damage from free radicals and restore a healthy balance.
